Hello everyone! I hope you’re all having a great day! Today has been wonderful so far. I woke up at about 6:30 and met my friend Tiffany for Coffee @ Starbucks at 7am. We had such a good time and got to talk about so much. While there I ordered a grande Skinny Caramel Maccihato. So yummy!
When I got home I made breakfast
This is one piece of sourdough toast, 1 egg, 1 white, 1 small tomato, and 3 basil leaves.
To be a little bit healthier this morning, I skipped the cheese and 1 yolk.
Simple things like that are good to do whenever you feel like it, because I saved about 200 calories by doing so, and at the time I didn’t miss either flavor 🙂
This totally satisfied me and was absolutely delicious!
About 2 hours later I had to run out the door to get some errands done for my job. I made a quick coffee to go, and felt like something to eat with it. I reached for one of these miny Clif Bars. They are so good, and so small! They’re a few 100 calories each, and taste so good! They’re going to be perfect for school. I want to get the mini LARA BARS too!
A few hours later when I came home from shopping I had a small snack of cottage cheese and fritos. I only ate about half, which is why this picture was perfectly suited! Haha
When I had lunch today, I was really craving chili! I am definitely a chili fan, and I have been very pleased with this Dennison’s 99% fat free chili! It has tons of protein, only 2 grams of fat, and tons of fiber- such a good balance!
This is what I decided to make for lunch. It was everything my body was craving, and now I am more than satisfied!
First, I opened the can of chili and put it on the stove in a pot over medium heat. At the same time I turned on the oven to 350 (that’s usually my go-to temp when I don’t have a recipe and I’m using the oven like a toaster)
While the chili was heating and the oven was warming up, I got out the footlong whole wheat subs my Dad just bought. I cut one into 3″ and split it down the middle. I stuck it in this glass pan, and then into the oven just so it could warm up while the chili got hot.
Once the chili was hot, I pulled out the bread and put chili on top
Then, I got out some shredded cheese and sprinkled that over the top
Next, I stuck it back in the oven for about 5-7 minutes until the cheese was melted and the toast was toasty
When it came out, it was perfectly toasted and looked/smelled SO good! I spilt it down the middle and put it on to two plates.
One plate for me, one plate for my Dad, who was washing my car for me- he’s so sweet! His love language is definitely Acts of Service! Anyways, he loved this lunch just as much as I did! It was nice to split because in the end we ended up each actually having 1/6 of a footlong, 1/2 can chili (one serving), and about 1/8 cup of cheese. Not too bad! Lot’s of protein and fiber too! So good, and again, soo simple! 🙂
