DAY 2: lunch, snacks, and dinner! :)

Good evening! I hope you’ve all had a great day! I’ve been in ONE SPOT all day studying, but I feel TOTALLY accomplished. I got 2 class lectures re-written, a lab 100% finished, and 3 extra credit essays DONE! Now I have all day tomorrow to study and not worry about getting anything finished šŸ™‚

For my lunch today, I decided on a smoothie. I was still not too hungry from breakfast, but I wanted to eat a little something to give myself some energy

I put some almonds on the side and eventually on top for some extra crunch. And a pretty picture of course šŸ˜‰

In my smoothie: water, unsweetened almond milk, mixed berries, 1/2 a peach, 1/2 a frozen banana, and guess what else?…. Two handfuls of SPINACH! Yes, spinach! It’s sooo hidden, and it’s such a perfect way to get your veggies. Throw them in your smoothie, you cannot even taste them. It tasted like a creamy blend of almond milk & fruit. Try it šŸ˜‰

For snack today, I had one small green apple, and a handful of pistachios

These snacks gave me some extra brain energy while I studied. You like my place mats in these photos? šŸ˜‰

For dinner, YUM…. I had a chicken chile lime burger on a bed of lettuce with guacamole I made just minutes before

And delicious, crispy GARLIC sweet potato fries! Sooo good!

This meal was delicious, and will hopefully tide me over through the night because I am off to go babysitt now! See you all back here next time šŸ™‚
