DAY 6: Sometimes failure comes before success!

Okay, now for today so far! I am excited to share with you! 🙂

This morning Kayla & I woke up at 7am and went downstairs to start our coffee. We had our traditional ‘coffee talk’ for about 1.5 hours. That’s the best! One of our favorite things about hanging out. We are coffee drinkers & big talkers! Haha

After our coffee talk, we attempted to make these baked eggs. We put them in the big oven instead of the small conventional over, and lets just say they didn’t get done enough, and we didn’t have time to let them finish. Sad to say that they didn’t get eaten! Just couldn’t do the partially cooked… Nuh-uh!

Instead, we had sliced green apples and sunflower butter before I had to run out the door to class. This was great, and super fresh/satisfying. The perfect little breakfast in a hurry. Sometimes failure comes before success 😉

When I came home, I threw this together. It was soo good!

What is it? Let me tell you..

Half a baked bell pepper flattened out, 1/4 cup turkey breast (canned), 1 tbsp. hummus, 1 tsp. mustard, and the leftover veggies from the attempted breakfast (not the ones that had egg on top, but the leftover in the pan- I just re-heated them). This was soo good, and so low-cal/healthy!

Now, I am off to the gym before I work so I can have a full night to study! Want to get all my plans out of the way 🙂

DAY 5: Healthy dinner & a petite treat!

Okay, now for yesterday’s dinner. My oh my was it good! Kayla and I went to Lassen’s (health food store- similar to Whole Foods) and used a 50% off coupon to get this dinner. So happy we did!

The combination of all the flavors was so perfect! So refreshing and perfectly filling!

We also added a lentil soup to the mix, because last night was a chilly night, and soup just sounded perfect. So did a fire! We sat by the fire to eat our dinner 🙂

This is the lentil soup. I have to say: It was very good, but I won’t have it again because this morning I felt like a swollen balloon! There was like 850mg of sodium in one serving of this soup. I’m not a salt fan as of today. I have been like anti-salt all day now.

Okay, for the Lassen’s picks: first thing, Beet Salad with carrots & onions. SO good, and I now LOVE beets! Do you guys like them? They are sooo good for you for soo many reasons!

Second choice, Chicken Masala. Amazing! The sauce was to die for. I’m sure this added to my sodium consumption as well…

Third choice, a refreshing lemon herb tofu salad. This was also fantastic! They also had a thai peanut tofu salad that I am dying to try! Can’t wait to get more of there food!

Now, after dinner, we made the banana ice cream I told you guys I was going to make (instead of going to frozen yogurt)

Petite Treats

Inside: homogenized frozen banana (made to puree) & sunflower butter

On top: toasted slivered almonds and organic, unsweetened coconut (I picked some up while at Lassen’s)

These were SO good, and so refresing! So lite, and so satisfying! I will definitely be making this again!

We had a ton of fun with the juicer last night, we even made cashew butter and snacked on some of that. We also split half of a Lemon Lara Bar because my Mom left half in the fridge and we wanted to try it. Trying new things is so fun 🙂

DAY 5: Eating at a family BBQ

Hello everyone! Okay, now it’s time to play catch up because I have been having too much fun since yesterday morning! 🙂

Yesterday, after I went shopping (found a CUTE pair of flats for cheapish at Nordi’s Rack) Kayla came to Ventura and we went over to my family BBQ! We had a great time!

Being the little sweetheart that she is, she did the diet while she was down to support my Mom & I. We ate the exact same thing.

We had burgers with no cheese or bun, potato salad, fresh fruit, and we split a little hot dog because they just looked so good!

The food was delicious, and we went back for more fruit for dessert while everyone was enjoying cake, brownies, chocolate/caramel covered strawberries/angel food cake… etc… You get the picture! Self-control, Paige! 😉

Here is me & Kayla, my best friend! She’s amazing, and we had such a good time. Thank you for coming down Miss K! Love you! 🙂

And here is little Kingston! Soo cute! He’s such a happy baby, I just love being around him. He has his first little cold right now, and still, he can smile like this almost the whole day. Such a good little boy!
