A healthy lunch & Christmas lights with Daddy!

Good evening everyone!

After the gym today I came home super ready to eat some lunch. I listened to my body so that I would be completely satisfied after I ate a nice healthy meal. First thing I felt like was an apple, so I cute one up and snacked on it as I cooked my food.

While My food was still cooking, I cut up some avocado. As I was about to put the other half away that I didn’t cut up, I thought to myself, “this is a really small, healthy, filling food, I should eat this other half too!” So, there you have it. My second snack! Half an avocado! 😉

For lunch, I ate a huge plateful of veggies! I cooked onions, carrots, bell peppers, and mushrooms first in some olive oils. Next, I tossed a bunch of organic spinach in some healthy gluten-free salad dressing.

Then, I topped all of the veggies on top of the spinach. It was the perfect salad, and totally satisfying! I ate this at about 2:30, and I plan on being hungry again right around 6, which is perfect because I babysit at 6:45 and will be full and not wanting to snack 😉

After my lunch, I made a little Chai latte with the Keurig. This is another one I love!

After blogging my earlier post, while enjoying my latte, I helped my Dad put up Christmas lights! Here he is! Isn’t he just the cutest?

And here I am, goofing off- of course! We had fun, and now it feels totally like Christmas! We even have the Holiday Music channel playing! I love it! 🙂

  1. Your salad looks delicious. I am struggling to eat enough veggies right now but I think if I made something that pretty, I’d be set. I love the red placemat too–good choice (or coincidence?)–it makes the photo look even better.

    • Not a coincidence- I thought the red would make the sun-dried tomatoes pop! Actually, if I were going to do this salad over I would used diced tomatoes, not sundried! But yes, I sometimes struggle getting veggies in on the daily also, so salads are my best bet!
