For lunch today, I was craving a grilled cheese! I made one that was super yummy, and I cooked it with coconut oil!
On the side, I cooked up this little concoction. It has brown rice, chick-peas, spaghetti squash, corn salsa, taco seasoning, and kale. Yes, I threw a bunch of things I needed to use together in a pan and let it cook for about 10 minutes on low heat. It turned out great! I had it as a little salad on the side, but my mom had a little bowl with a few fritos and said that was great too!
On my grilled cheese, I had whole wheat bread (sliced right from the loaf- that sounds funny, haha!), 1/4 avocado, one slice of cheddar cheese, and about 1 tbs of bleu cheese crumbles. Yum- so good! I forgot that green salsa, or salsa verde is super good in grilled cheese too! If you guys make it, throw a tbs of that in there too! I totally got this idea from the wonderful menu of Urbane Cafe 🙂
