TrEAT Post: Candy Apple Nachos!

This morning I had a homemade protein bar for a snack.

After my snack, I went to the hospital with my Dad to pick up my Moms sweet friend, Molly. She just had surgery. I couldn’t believe how well she was doing! When we got to her house, I made her some oatmeal, and it smelled/looked so good that I decided that’s what I was having for lunch 🙂

I came home and made this bowl of oatmeal:

Old Fashioned Oats, banana, almond milk, coconut, slivered almonds, vanilla extract, and a little bit of gluten-free granola sprinkled on top. It was perfect!

I also had some of Kayla’s Chocolate Protein Bar sliced up on the side. 4 little pieces with drips of Peanut Butter on each belly. Soo good. I loved adding the PB. I’m just in a PB mood today! Probably because I am tired and it’s such a comforting, cozy food. Isn’t it? 🙂

Now for the trEAT (yes, this is a new category) for all of you! Clever, “trEAT,” right? Haha :-*

Candy Apple Nachos! ♥

.sliced green apple.

.peanut butter.

.shredded coconut.

.white chocolate chips.

.cinnamon.

Slice up the apples thinly

Sprinkle shredded coconut over the top

Get out a little glass bowl, heat your peanut butter for about 20 seconds (+/-) and then drizzle it all over the apples. I used a knife to drizzle the excess that stuck to the bowl. Can’t forget any PB! 😉

Next, get out your white chocolate chips, place about a table spoon over the top of your nachos, and heat them in the microwave for about a minute. I kept checking mine ever 20 seconds or so to make sure they didn’t burn or get “rubbery” from the microwave. The white chocolate chips are just sooo good when they are melted!

If you remember, the other night I was bragging about them in my Oatmeal! Well, my Dad went and bought me some today! What a sweetie 🙂

Oh, and I am italicizing the white chocolate chip part, because I really want to encourage you guys to try them with white chocolate chips. For dessert, when I want chocolate, I reach for the dark chocolate. But for this, the white chocolate mixed with the coconut, oh my oh my! Please do 🙂

  2. Num! Those all look so good! I had a question, when you did the 7 day challenge for TIU did you lose any extra weight? If so how much? I am thinking of starting it monday but also do not want to lose weight while doing it only to gain it back a couple days later when I go back to eating my regulary healthy way. Any advice would help! Thanks!

    • Hey! I did it for 6 days and lost 6 lbs… I am not sure if I gained weight back… I dont feel like I did, but I’m sure I gained a few water pounds back. It was such a hard week, and was so restrictive that I don’t think I would do it again…
