Quinoa Ceareal with Caramelized Banana Recipe

Happy Monday everyone! Are you all ready for the week? Good, neither am I! ๐Ÿ˜‰


To start my day, I re-created, with a few twists and turns, a recipe from Running to the Kitchen!

It’s called Quinoa “Cereal with Caramelized Banana’s

I pinned this on my ‘Get to Cookin’ pinboard yesterday, and couldn’t wait to try it! I am making something else from her site for lunch today. Talk about trying someone else’s recipes! She just has so many great ones!


Okay, first of all, you need to make your Quinoa

Get out 1/2 cup Quinoa, and 1 cup of water


Boil the water in a small saucepan

Once boiling, add in your Quinoa, reduce to low heat, and cover.

Let that cook for 15 minutes


While that’s cookin’ get out a mixing bowl to start on your toppings


In the mixing bowl (this is one place I changed the recipe, according to what I had available in my kitchen)

  • 1 chopped banana
  • 1/2 tsp. cinnamon
  • 1/2 tsp. pumpkin pie spice (use nutmeg if you have it)
  • 2 tbsp. chopped walnuts
  • 1 tbsp. agave


Mix all of the ingredients together


In a medium sauce pan, heat 1 tbsp. of coconut oil (she used butter)


Over medium heat, put your topping mixture in, stirring occasionally for about 5 minutes until your banana’s are caramelized to your liking


Get your almond butter & almond milk out and ready to go! (She uses coconut milk)

Once your timer for the Quinoa has gone off (after 15 minutes), let it sit with no heat, uncovered, for 5 minutes, fluffing with a fork

Once it’s been rested and fluffed, scoop your serving into your favorite bowl (very important!!), add the desired amount of almond/coconut milk (or another favorite that you have), and heat in the microwave for 30-45 seconds (depending on your serving/taste buds)


Now it’s time for the toppings (the very best part!!)

Slide a good amount (if not all) of the banana mixture right on top. Trust me, you’re going to want some of this Banana Mixture with each bite!!

If you like almond butter, put a good size spoonful right on top. Taste some with each bite!


Quinoa is a vegetable protein (great source of protein!!) that looks like a grain, and makes great porridge/cereal. It’s great for people who have gluten-sensitivities, or are on No Grain Diets

If you don’t have Quinoa, and you’re craving this RIGHT NOW, then I suggest using Oatmeal! Or whatever other breakfast porridge you have. I am convinced this topping would go great on ANYTHING. Yogurt, Oatmeal, Toast, or Quinoa (clearly!!).

Study mode! Checkin’ in!

Good morning everyone! I am going to do a quick post of my day yesterday before I am off to school this morning.

It’s finals week, so yesterday morning I woke up at 4am to study. Ended up paying off really well because I got a 99% on my Anatomy Lab Exam! Felt great! I have really high grades in both classes- so I am hoping and praying to be relieved from taking the finals!

At school I had a thinkThin bar to hold me over until I got home later that afternoon

When I got home I had 2 of my Mom’s gluten-free cookies! Without giving away her recipe, she made these oatmeal cookies by blending oats in the blender instead of using flour. If you have celiac and are sensitive to even the slightest bit of contamination (which I am not), then you should definitely buy gluten-free oats (which are sure to be free from contamination).

A few hours later for dinner, Kurt and I had soup that my Dad made. It was so good, and reminded me of Italian Wedding Soup! Mmm!

I can never say it enough, I love my Dads soup!

Before we left to Coffee Bean last night to study with people from our class, I grabbed an apple to end my eats for the day.

This morning for breakfast I forgot to take a picture, but I had the same breakfast as pictured above. I will probably not be posting today, but I should be here tomorrow to fill you in on what I ate today! ๐Ÿ™‚

My Mom is the best :)

My sweeeeet Mama made me gluten free cookies while I was babysitting!

She sent me this text, and I wanted to cry- what a cheeseball, right?! But it was so sweet!

I had herย cookieย 3 cookies with a nice warm cup of hot cocoa ๐Ÿ™‚ PS, I had the three cookies over a period of a few hours while studying. Not too bad- by the end of the day everything still balances out for me because I make good choices later ๐Ÿ™‚

And here was my good choice later. A very lite dinner. Salad and soup!

As my last snack of the day, I had a little bowl of popcorn!

This popcorn has nothin’ but a TINY bit of salt. My Mom added more after I took some because I cannot stand too much salt on anything. My Mom popped this in the pressure cooker- so much better than bagged popcorn!

Now, I am drinking some warm water with lemon to sooth my cold, and then I’m off to bed. I’m waking up at 4 am to study tomorrow. Got to make the best out of this last week at school. I need those A’s, and I REALLY hope I did good enough in the classes to not take our finals. I sure feel like I did! Fingers crossed!

LARABAR and Coffee Break

Brady and I had fun today! We build this little wooden house ๐Ÿ™‚

After I put the kids down for a nap (Mer was already down), I sat down for a nice cup of coffee and a chocolate chip cookie dough LARABAR.

This bar was yummy, but honestly not my favorite… I don’t think I’ll be buying this one again. I’d rather have lemon, coconut, ginger, or apple pie… and of course there are others I love too ๐Ÿ™‚

Oh, and this ended up being my lunch because I wasn’t hungry enough to eat my soup.

Babysitting Munchies- what to do!

Good morning loves! This morning for breakfast I had 1 egg, 1 white, and half a gluten-free Udi’s bagel with just a little bit of butter. This breakfast was perfect, lite, and satisfying. I saved the other half of my bagel for later because I knew I would want it for a snack ๐Ÿ™‚

I am babysitting this morning, and the kiddo’s are playing with plado, watching yo-gaba-gaba, and we are going to play a game right after this post (after yo-gaba-gaba) hehe.

The little guy made me a cookie! He said I should pretend eat it. It was really yummy ๐Ÿ˜‰

As a snack a little later, I cut up an apple. Oh, I had an apple last night after dinner too! My friends Angela and Avia came over and we had tea and talked all about Ang’s new job ๐Ÿ™‚

Here are the kido’s again!

For another snack, shortly after my apple, I toasted the other half of my bagel, put a little bit of peanut butter on top, and one small sliced banana.

I realized some time ago that whenever I babysit, Iย alwaysย get super snacky. If I don’t bring my own food, I will end up eating too many random snacks that I find around the house. Now, I bring my own healthy snacks so that I don’t feel deprived, and I don’t feel yucky after I leave. The funny thing is, just knowing that I have snacks with me usually makes me eat less. I don’t ever finish my own.

Today I packed: 2 eggs, a bagel (breakfast/snack), an apple (snack), soup (maybe lunch), and a LARABAR & some nuts that will probably still be in my lunchpail when I leave. Also, I packed one decaf Starbucks VIA Coffee that I am having right now, black. Very yummy! Keep in mind, I am babysitting from 9am-3pm today, that’s why I packed so much. If it were only a couple hours I would have just packed a LARABAR and an apple or something like that ๐Ÿ™‚

Do you guys feel me on the getting snacky while babysitting issue?

Gluten-Free Bagel. Thank goodness!

Dinner- I was CRAVING a bagel tonight, so I decided to head over to our local whole foods store, Lassens, and see if I would have any luck. Sure enough, I did!

Gluten free bagels by Udi’s! These are SO good! I honestly like them more than regular bagels! They have such a good flavor! The only downfall is they are aย littleย pricey- but totally worth it.. $6.49 for 4 bagels… that’s pricey, right?

Anyways, I toasted mine, put aย littleย bit of smart balance buttery spread, then put 3 slices of tomato, 3 leaves of spinach, and one piece of swiss cheese on each side.ย Next, I stuck them back in the toaster oven on broil for a few minutes and they came out perfect! ๐Ÿ™‚

This was so amazing, and totally satisfied me! This is the reason we should always eat what we are craving- just make it healthy! Oh, and I had a small bowl of carrots on the side ๐Ÿ™‚

Good afternoon loves! So, I just finished cleaning the whole house for my Momma!

In between cleaning for 4 hours, I stopped and took a break for lunch. I had the same thing I had last night. Soup and corn-tortillas. I have been having a serious craving for corn-tortillas lately! They’re so yummy!

After I finished cleaning a couple hours later, I stopped, got some coffee, and sat down and treated myself with a Ginger Snap LARABAR and a nice, warm, yummy cup of coffee with pumpkin pie spice creamer.

Now, I was totally hesitant to try this LARABAR, but I did anyways because I’ve hear it was good. It is super good! I really enjoyed it! It doesn’t taste gingery, it tastes more clovey or cinnamonish.. Super yummy, especially with some spice in my coffee! ๐Ÿ™‚

Okay, now I am off to shower and get ready to go to Coffee Bean for some study time! See you all later ๐Ÿ™‚

Happy Day!

Good morning loves! First of all, let me catch you up on the rest of my eaties last night. I went to a study session with my boyfriend and girl friends. We got lots done! ๐Ÿ™‚

I took these Gluten-Free cookies, and look! They got eaten! I didn’t think people would touch them because most people think of gluten-free food and say “ew!” But don’t believe it. It’s yummy! It’s just like any other food- all in how you make it! I ate 2 of these lil’ babies and was happy & satisfied ๐Ÿ™‚

When I got home, I was hungry again and felt like fruit. So I cut up a kiwi, banana, and apple and enjoyed myself some fruit!

This morning, I woke up, answered emails, got WAY HAPPY for my buhff Angelala because she just got an AWESOME job with a fashion company, and made breakfast! One egg, one white, gluten free toast (thats one piece, but its broken), and coffee!

Also, I’m drinkin down some emergen-c that my friend Danielle brought me. Trying to get better! I had a nasty cold for 4 weeks, then it went away, and came back 3 days later. Now it’s at the end again- I HOPE! Prayers that it will go away, please & thank you! ๐Ÿ™‚

Have a happy day friends! It’s now time for me to clean house! Be back later with lunch- I’m thinking soup again! My dads soup is unavoidable!

I got glasses! Woohoo! Oh, and my food ;)

Good evening tumblies! How are you? I hope well!

This morning for breakfast, I had a brown rice tortilla with one egg & cheese- quesadilla style! Yums!


For lunch, I had one slice apple, with slices of a caramel peanut butter protein bar!

Such a healthy, yummy treat! Tastes like caramel apple!

And look! I got glasses! I have wanted glasses ever since I was a little one. These ones are so cute! They look like ray-bans, but are actually Chanel. The little spots on the front-sides are little Chanel signs. Cute huh?!

For dinner, I had soup! Yummy homemade soup that doesn’t ever compare! My Dads the best!

I also had two corn tortillas on the side! So yummy!

99% fat-free chili & corn tortillas

The rest of yesterday. So, my lunch at school was a Blueberry LARABAR and a little bag of trail mix. When I got home from school, about 4 hours later, I snacked on an apple.

Just a couple hours after that, I made a super simple dinner, that tasted like it took forever!ย I was craving corn tortillas, and chili, so this is what I came up with! Thought: maybe this sounded good because I’ve had chili and cornbread before? Hmmm…

I put a little bit of olive oil in a pan at med/high heat. I dumped some slivered onions in there that I had just sliced. After that cooked a few minutes, I just stuck the corn tortilla on top of the onions so they could pick up some flavor- better that just sitting flavorless on the counter, right? ๐Ÿ˜‰

After the onions cooked I moved the corn tortillas under the onions so they were directly on the pan and let them soften in some olive oil- they felt so perfect! I lined my plate/bowl (whatever you want to call it!) with 2 corn tortillas, poured a can of 99% fat free chili on top, and topped it with sauteรฉd onions. So good, and soo simple!
