Boysenberry Nut Oatmeal

You didn’t all think I was going to go a day without Oatmeal, did you?

Well, I didn’t go without my Oats, but I did go without the Body Works Class tonight

Why? Because I am trying to get my blog self-hosted, and it is taking it’s sweet time. There are soo many little challenges throughout this process, and it requires a lot of waiting and patience. I have actually gotten much further than I thought I would though, so that’s great!

On another note, dinner! I had Oatmeal! Of course! I swear, my body feels so much better when I eat Oats everyday.

Tonight, I put Boysenberry Jam in my Oatmeal. Oh. my. goodness! It was like dessert!

I always use this basic creamy Oats recipe:

  • 1/3 cup water
  • 1/3 cup almond milk
  • 1/3 cup Oats
  • 1 tbsp. chia seeds
  • 1/2-1 banana
  • 3 shakes of cinnamon

The method?

  • Boil 1/3 cup water
  • Add 1/3 cup Oats once boiling
  • Reduce to med heat
  • Add in chunks of banana (thick slices)
  • Add in almond milk
  • Stir/heat until it’s the consistency that you like
  • Pour into bowl
  • Add your favorite toppings

My toppings tonight included:

  • A little bit more Chia Seeds (this is seriously a miracle digestion seed)
  • 1 tbsp. gluten free granola
  • 1 tbsp. white chocolate chips (give or take)
  • 1 tbsp. almond butter
  • 1 tbsp. boysenberry jelly

So deliciously good! And now I have my Oatmeal craving covered for the day 😉

I have noticed lately, that even though I love Oats for breakfast, I also love having them later in the day

When I eat Oats for dinner, they are perfectly filling, and they are so warm and comforting, that they truly feel like a treat. There is just something about Oatmeal that I am totally obsessed with!

Tonight as I was eating it, I was thinking…. There are probably so many other foods that we can add toppings to, try tons of different flavors, etc… but we just don’t… Like, when I make rice… why don’t I try all of these cool flavors and toppings? What about grits? I think it’s time for some more experimenting!

For some reason, rice and pesto just sounds sooo good… Hmmmm….. ideas are popping up everywhere… rice, pesto, goat cheese, spinach….? Wouldn’t that be good?!

Haha, I am just in a food mood (wait, when am I not???)

I am off to Trader Joes, because my Almond Milk is almost out, and there’s no way my life will go on tomorrow unless I go get more right now 😉

Chicken Parmesan.

Tonight was too good to pass up! It was chicken parmesan with whole wheat spaghetti

Mind you, I am not usually a spaghetti girl at all, but this was so great! Thank you Daddy 😉

It was full of flavor, and nice to have a meal cooked for me. It required 0 amount of effort, and 100% enjoyment!

I think I’m going to miss this when I move out… 😉

A Few Confessions

So, I have a confession. I am addicted to Oatmeal.

Well, I am kind of addicted to these too…. I photographed one, but I ended up eating SIXTEEN cookies!

My next confession, is that I always feel like someone is watching me through that little camera hole on my MacBook

Truly, I get most concerned when I am changing (makes sense, right??) so I covered it up with a post it 😉

I am guessing I am not the only one who is creeped out by this spooky little eye (????)

And my last confession today, is that we put Noah in a shower cap today.

Don’t get mad! We only kept it on for the sake of the photograph. Please tell me you’re getting a laugh out of this like we did? It was sooo funny, and boy was he glad to have the camera out of his face, and the shower cap off his head. Good thing I got cuddles later, he still loves me 😉

I added banana, flaxseed, and peanut butter to top it. I am taking this to my babysitting job tonight.

Also, I made some Overnight Oats (same recipe as todays) for the morning. I have to wake up at 5am, and leave by 7am for San Diego, so I need something quick and filling to eat before I leave. Jeeze, I wonder if I should take some more Soakin’ Oats for the road? (AHH! Eat something else, Paige!!)

P.S. I am sorry if you thought I was going to confess something cool and crazy. Nope! It’s just my Oats addiction!

Have you ever gone through an Oatmeal OBSESSION, where it was pretty much all you wanted to eat? It’s soooo goood!!! I could literally eat it for every meal right now.

Boredom Munchies

Look how beautiful it was today! Blue sky’s here in Sunny Ventura, Ca

Okay, I know what you’re all thinking, “Paige, you’re not a weather woman, stop acting like it.”

Or, you may be thinking “wait, is this a freeway off-ramp? Is she driving and taking pictures?”

What??? It’s not a cell phone….. 😉

I had to document this picture, because it is literally the first time I have remembered to get off at this exit since I started babysitting on Tuesdays (maybe 2 months now??). For some reason, every time I am driving to my Tuesday job, my brain gets going and going and I always pass the exit. It needed to be documented!

I had to show you all this cute jewelry box that Harper made. This is one to “Pin!”

It’s a shoe box, painted with pretty colors, and decorated with beads. You can’t see the bottom, but all four corners have wooden beads as well so that it is lifted. Mom’s (Dad’s??) if you want something to do for craft time with your little one, get the shoeboxes out! I’m sure you can come up with something cute cool for little boys too! Car box? Card box?

While I was babysitting, I had a small snack with prunes + hummus and a few falafel chips.

These falafel chips are from Trader Joes, and they are SO good! They are pretty pricey for chips ($3.99 for this 8oz bag? I think?) but for a treat, they are so great! And healthy (for chips!!)

And a few prunes on the side. I really love prunes! We never have them at my house, so I like to grab just a couple when I babysit. I should really buy some!

About an hour or so later, I had the yogurt that I brought from home.

  • 1/2 cup non-fat greek yogurt
  • 1 tsp. honey
  • 2 tbsp. granola
  • good amount of berries
  • lemon zest for a fresh, tasty flavor

This yogurt was, GREAT!

A couple hours later when I got home, I was surprised with Corrales that was patiently waiting for me in the fridge! Again?! I could NOT pass it up. So amazing!

I split this burrito with my Mom, and oh boy was my tummy happy (I was pretty happy too ;)).

Last, but definitely not least, I had my blueberry muffin LARABAR. I love LARABAR. Love. Did I say love?

I ate all my food pretty early, and I am tempted to eat more now, even though I am not hungry, just out of boredom (please tell me I’m not the only one who experiences this at night??) Instead of eating an (un!!)necessary meal, I’m going to get my overnight oats ready (I think cooking is really what I feel like doing), I am going to drink some tea, and do some researching about school/etc. that I have been needing to get done. I am looking up classes/schools to be a registered dietitian! What do you all think? 🙂

For dinner, I had Oatmeal! Who saw this coming?

Most of you are probably aware that there is Oatmeal in at least one of my posts per day recently

In my Oats:

  • 1/3 cup Coaches Oats
  • 1/3 cup water
  • 1/3 cup unsweetened vanilla almond milk
  • 1/4 cup greek yogurt
  • 1 tbsp. peanut butter
  • 1 tbsp. white choc chips
  • 1 tbsp. soy nut blend
  • 1/2 tbsp. shredded coconut

I’m not sure if the greek yogurt is my favorite.. Many bloggers put it in their Oats, and I wanted to try it… but I think I might enjoy my Oats more without it…? I am really not sure… I’ll give it a few more tries 🙂

Sweet Potato Fries, and a Simple Recipe for Healthy Dip

Good evening friends! Hope you are having a great day!

Today, before going to Trader Joe’s with my Mom, I had two snacks

  • A kiwi
  • A small handful of Almonds

We got lots of goodies! I was craving sweet potato fries all day, so I bought some to have for dinner

To eat with my sweet potato fries, I made a dip:

  • 1 good spoonful of non-fat plain Greek Yogurt
  • 2 tsp. extra virgin olive oil
  • 1/4 tsp. ground cumin
  • 1 shake powdered garlic
  • A touch of sea-salt

After you put these together, mix up the dip and stick in the fridge until you’re ready to eat

To go with my sweet potato fries, I had half a container of Vegetable & Grain Country Salad topped with Bruschetta. If you can see in the pictures, I always drain the oil from my bruschetta sauce. It’s way too much for me, and always makes me feel funny. By draining the oil, it doesn’t lose it’s taste and in my opinion, it tastes even better! I love Bruschetta Sauce!

I cooked my sweet potato fries in just under 1 tbsp. of coconut oil. Cook on med/high heat until the edges get golden brown.

So many people recommend using Coconut Oil for it’s healthy benefits. I’d like to find out more, because by reading the label, it seems very saturated… I don’t see how that could be healthy for you? If you have any information, send it my way! I would love to know! In the meantime, I will do some research and get back to you all. If it doesn’t have healthy benefits, I would just as happily use Olive Oil! I love it!

Today has been so nice, and so relaxing! I did not get ready one bit!!

I stayed in my pajama’s all day, showered quickly, and then went to TJ’s. Other than that, I have been one happy bum! 🙂

OIAJ- Oats in a Jar!

Guess what I had in my fridge?!

Yep! You got that right! An almost (!!) empty sunflower butter jar. You all know what that calls for!

I learned about OIAJ from Eating Bird Food’s blog! In fact, I learned that food blogs existed from her blog!

My OIAJ had:

  • 1/3 cup coaches oats
  • 1 banana
  • 1/2 cup unsweetened vanilla almond milk
  • 1/2 cup water
  • 1tbsp. peanut butter (there wasn’t very much nut butter left)
  • Toppings

    • 1 tbsp. White Chocolate Chips
    • 1 tbsp. Soy Nut Blend

You can make your Oats in a Jar cooked, or overnight (no cooking involved)!

I will do this soon and let you all know how it works too. My followers who have been with me since the very beginning know that I used to be obsessed with Overnight Oats!

Look who I got to babysit tonight! Hello Sean! 🙂

He is the absolutely cutest little boy! Ohhh my goodness! It seems like he is just content all the time.

His parents say he is “nosy” because he watches everything you do! It’s sooo cute! I took this picture because as I was sitting in front of him eating my Oats, he just peacefully starred at me. Gah! Such a cutie!
