Delicious Oatmeal ♥ Flourless ♥ Cookie Recipe

Hello everyone! I hope you’re all having a great day!

Here is the recipe for the cookies my Mom made yesterday.

She makes them all the time, and my friends and I love them! This time, she added less sugar, and I thought they were still just as good! So, if you want to lighten up, I recommend you only use the 1/4 cup cane sugar (they were honestly amazing just like this!!). If you want them to be more sweet, like my Momma, use the full 1/2 cup sugar. This recipe makes 32 cookies*



  • 1 cup butter (2 sticks)
  • 1 cup brown sugar
  • 1/4 cane sugar (1/2 for regular sweetness)
  • 2 eggs
  • 1 tsp. vanilla
  • 2 cups Oat Flour (directions below)
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 2 cups walnuts
  • 3 1/2 cups Old Fashioned or Coaches Oats (not blended)


  • Heat oven to 350
  • Mix together- melted butter, brown sugar, cane sugar, eggs, and vanilla
  • Next add 2 cups of oatmeal to a blender and blend until looks like oat flour- pour into a separate bowl
  • Add 1 tsp. baking soda, 1 tsp. cinnamon, & 1/2 tsp. salt to the blended Oats
  • Now stir both mixtures together in one big bowl
  • Finally, stir in 2 cups chopped walnuts (or 1.5 depending on what you like) & 3 1/2 cups of Old Fashioned or Coaches Oats (not blended)


  • Roll balls of cookie-dough and set on parchment paper (on a cookie sheet)
  • Flatten the balls if you want them more crispy; leave in little balls (maybe 1.5 inch) if you’d like a more fluffy cookie


  • add a few white chocolate chips on top (just for me, please???) 😉


  • Bake for 18-20 minutes (20 minutes for crispier cookie- like the photo)

In this picture: the ones in the back are ready to go in the oven, and the ones in the front just came out 🙂

Don’t Let the Picture Intimidate You

And now for breakfast this Sunday morning! Does it still count as breakfast when you eat at noon?


I guess it is called brunch. Or, it is called sleeping through breakfast and eating lunch.

I can’t call it lunch though, because knowing me, I will still eat 6 small meals before I get to sleep.

Anyways, moving on to the food! I had an Ezekiel Cinnamon Raisin English Muffin (I almost lost my breathe typing that run on title) with Peanut Butter & Honey

I love this creamed honey from Trader Joe’s for spreading!


This morning, I wanted to share a couple of fabulous new blogs that I stubbled across. I will be following these daily now.

And yes, I love making my food (and the pictures) look nice.

I try to be as realistic as I can, but sometimes, setting your food in the planter for a picture is just more pleasurable to look at.

I eat in the planter all the time… who doesn’t? 😉

Never be discouraged by a picture.

I think this happens with readers. The point of us bloggers taking time to make the food look nice, is for the pleasure of looking at it; a nice picture even makes the food more enjoyable to eat. Don’t be discouraged, thinking “that looks way too put together, I can’t make that.” I know some of you feel this way at times, because I do too when I look at a certain blogs, or a recipe book. It’s normal to feel that like, but don’t tell yourself you can’t do it. You can!

Put yourself in a bloggers position (or maybe you are a food blogger): when you take the time to post your food to the world, you obviously love food, and you want to share the beauty of it. Of course you want to have great pictures. It doesn’t mean that you took more time making it… it doesn’t mean you’re any better at cooking or putting things together… it doesn’t mean that you’re better than anyone else… it just means that this is your hobby, and you want to share it to the world through your own creative eyes, and you want it to be enjoyable to other peoples eyes! You can’t taste the food that we make, so the way we make it taste good is through a fabulous picture. I think that last sentence explains it pretty well!

How to live in a nice, tidy, clean home (wink, wink)

Good morning everyone, and Happy Sunday! I love Sundays!


First of all, after a super busy week, I get to sleep in! Yes, this is absolutely sleeping in for me.

I am a have-the-coffee-set-for-5:45am type of girl. A wake-up-at-6am & have quiet time type of girl.


Last night, as I was driving home from my babysitting job, my clock hit 12:34! 1-2-3-4!

The superstitious (not really) side of me knows I am getting lucky now 😉


Before going to bed, I stuck this sign on my door.

This is always taped to the back of my door, so that when I need to not be distrubed, I can simply stick it up.

Luckily, my parents totally respect it. It’s the nicest way to say, “Please, leave me alone!” 😉

I actually created the sign for when I was studying. It worked great while I was in school! I recommend it.


You guys wonder why I slept in so late? Who wouldn’t in this comfy mess of white sheets, a down comforter, and cozy quilt.

Not to mention the memory foam on top of my fluffy mattress. Yes, I truly believe I have the most comfortable bed. No other will suffice 😉


And yes, all of these sit on this chair while I sleep, and go back on my bed in the morning.

Mmmhmm! You’re right again! These are in addition to the other 4 pillows that I sleep with.

I like pillows! This reminds me of the pillow scene in Along Came Polly. I agree, it doesn’t make sense, but I just can’t help it!

Now, I thought it would be an EXCELLENT idea, to show you guys how to live in a comfortable, clean, organized home.

We all want to live clean & comfortable, after all… don’t we?


First of all, you should have a Dad who constantly does construction: that is KEY!


Secondly, you should take ALL of the flooring out of your house


3rd, any and all flooring that you choose to leave, you should keep it clean. Nice & tidy is important!


Next, make sure you have an inviting living room. You want your guests to feel warm and welcome upon arriving.


For entertainment purposes, make sure your dining room is easily accessible.

You want to have a nice, open space to display appetizers, eat meals, and socialize with friends and family.

The dinner table is one of the nicest places to visit!


And best of all, when you’re walking around your house, taking pictures of all the put-together-ness, trip over the backdoor step, and fall into the tomato plant. I just did that, and it felt so great! 😉

Do you have certain pictures that give you happy feelings inside?

Do certain pictures give you happy feelings inside? I have a little album on my computer, full of pictures that just give me good feelings. I think some of you may relate!

All of these pictures, have great memories behind them. I am such a visual person! I see things, and they either bring me good feelings, or not-so good feelings

This first picture, I remember taking on my way to school, right when Healthy Hits the Spot first started. I was so excited about my new passion, and I remember this day just feeling so filled!

The next picture, is a memory from a time where I visited my best friend. We were grabbing breakfast before I left to go back home. Starbucks Spinach and Feta Wrap, yum! This is one of out favorite “quick-fixes!”

This picture of me with my Coffee, was from when my best friend stayed with me through an entire weekend (we rarely get to do this). We did so much that weekend. We went on walks, baked, cooked, got coffee, went shopping, just sat & talked… everything that we love to do, we did! I even drove her around Ventura, telling her about all the memories I have in my hometown. It was such a great three days!

The picture of Chloe and I, brings me such smiles! This little girl is literally one of the brightest shining lights of my life. I love her so much! This was a day that I was babysitting her after Church. We went with my Mom to lunch out on the boardwalk, and had the best time! Can you see her drawing? She is quite the artist!

This picture of me standing in the hallway, was a Happy Sunday that I got to share with my friends. It was a morning right before I left to Church. I went to a new Church in Ventura this morning (Missionary) and really enjoyed it! Plus, I went with friends that I hadn’t gone with before. After Church, we all went out for Pizza, and then went shopping in Santa Monica! I love this Memory.

The picture with my apples and peanut butter was a night where I was hanging out inside with my Mom. We were having an All My Children (sooo sad that it is over!!) and drinking wine. Hanging out with my Mom always brings me good memories. I appreciate all the time that we spend together, and I am excited to look back on it all one day when I have a daughter (not for quite a while!!)

Both of these pictures are of the Best Friends Vacation that Kayla and I took about a year ago (wow, time flies!!)

We had the best time. I honestly think that may just be one of my favorite memories with her. We decided we wanted to get away, and have a girls weekend, so we randomly got a hotel room in a spot where we felt there was lots to do, we went to dinner, gymed it, shopped, walked around, got dessert, talked, ate chocolate, drank wine, got all dressed up… everything that you can imagine during “girl-time,” we did! It was seriously the best… I can’t wait until our next one! Yearly goal?


This next picture was the day I re-started my blog, after taking quite a few months of a break. I was soo excited this day! This was right after Church, with Chloe. My friend Marco and I went to breakfast, and she came with! I remember the feeling of taking pictures of my food that morning. The fun was all re-starting!

The picture of my cousin and I, was the day we both got baptized! That speaks for itself! This was an AMAZING memory! This whole day felt like a Birthday to me! My parents, friends, family, everyone was calling me, texting me, congratulating me… I must have gone to eat 3 times that day, hungout with my friends, had a jacuzzi night… just so much good happened that day!

This picture of me and Lula (her name is Angela, but I call her “my Lula,” was taken of us on her Birthday last summer. We had soo much fun this day! A big group of us girls got together for breakfast, then went over to our friend Kelsey’s house, drank Mimosas, and then went to Santa Barbara for the day to go shopping. Boy did those Mimosa’s make my wallet seem bigger than it was! Whoops! That night, Lula had a huge Birthday Party, where tons of our friends came to her house and celebrated. We had such a good time!


This picture is of me & my Daddy-o on his Birthday in 2011. I loved this night! We went out and met my brother & sister (his wife) for Indian Food. I got to try new things (Mango lassi is a must try!!), spend time with my family, celebrate my Dad, and just feel tons of good vibes. What could be better?


This is a picture of me & my cousin Haley. One of my very best friends. We have been joined at the hip since we were little girls (princess angel’s as Haley like to say; I loved to copy her). This day, we were at my cousin Jamie’s Babyshower (baby Bella has now been here since Thanksgiving, and she is absolutely amazing!!) and as you can see from the picture, we had a great time!


And this picture. The face of my blog, twitter, facebook… the list goes on! This picture brings me some of the best feelings. I remember the joy that I felt this day, and when I see this pictures, all that joy feels like it is still here (well, I am still joyous!!). This was taken right after an amazing morning at Church. My Mom had just boughten me this shirt the day before, and it was my first time to wear it. It felt so bold, so bright, so fun! This picture just brings me happiness, because I know how great that day was.

Do you and your scale have a bad relationship? Maybe it’s time to break up.

Okay, so last night, Kayla and I were talking about the scale, and how much of a bummer it can be. Girls, we understand!

It controls the way many of us girls think of ourselves, on a daily basis.

We step on in the morning (clothes, underwear, hair ties, jewelry off), and if we’ve gained a couple ounces, we automatically think we messed up the day before, and we wonder “what am I going to do today to fix this?”

Often times, we get mixed messages… what if we did great the day before? We exercised, we ate right… Then why on earth do we weigh more the next day? We feel like we have failed.

Well, here’s why that number is never the same.

We are not bricks.

Yep, it’s that simple.

When you get on the scale and you gained a pound overnight, maybe even three… do… not… freak… out!

There was a time where I did a little experiment. I weighed myself everyday for 21 days, to prove to myself, that weight fluctuates day to day. Keep in mind, during this time I ate the same healthy diet, everyday. This was when I wasn’t eating Grains, Sugar, or Cheese… so trust me, it was healthy!

I started out weighing 134

In between, I weighed 133… 134… 135… 136… 137…

And at the end… guess what I weighed?


Now, think about it… if I only weighed myself, lets say, once every 3 weeks (for all you math wizards, that = 21 days)… I would have looked at the scale twice, and both times would have weighed exactly the same.

Now, this is not a guarantee that you’re going to weigh the same both of those times, and that may have been just by chance, as each day really is different.

The point is, you don’t actually gain a pound overnight.. You don’t actually gain three-five pounds when you’re PMSing.

To put it into perspective… here is one pound of fat.

Now tell me now… do you think you gained three pounds overnight, just because the scale said so?

No, I don’t think so either!

Now, back to the brick analogy. You are not a brick; you are a human being.

If you were to weigh a brick, everyday for a year, it is going to weigh the same amount every single day.

You, on the other hand, could weigh the same amount on the first of the year, and the last of the year, but I can almost guarantee you that you’re not going to weigh the exact same all of those 365 days (unless you’re superwoman).

You are a human being. Give yourself a break, please. You consume different amounts of liquids each day.. you do different levels of movement each day.. you eat different foods each day.. your body bloats some days.. other days it’s dehydrated.. your digestive system works great some days.. some days it doesn’t work at all.. I think we all get the picture.

We have to stop obsessing over daily weight. I for one, put the scale away weeks ago for this reason. I do not weigh myself everyday. I weigh myself when I feel like it. And yes, if you want to only weigh yourself when you feel “your lightest,” then go for it! It’s your body, and your mind. You know what’s going to make you feel good, and what isn’t.

If weighing yourself everyday, stresses you out, then I strongly recommend putting your scale away. Start with 30 days. You owe it to yourself to feel good. This is your one body, your one life, your one chance to do all the things you’ve ever wanted to do.

Take a few steps back, and look at your life from far away. Is weighing yourself everyday really that important? And how much more would you be doing if you didn’t weigh yourself daily? Yes, I know from experience that if the scale isn’t what you want it to say, you’re less likely to go out and do the things you love, your less likely to have the confidence that you deserve, and you’re less likely to love yourself and others, to your fullest ability, because you’re stuck feeling pretty crappy about yourself.

So, if you are struggling with the scale, are you going to put it away for 30 days? Do it for YOU. You should be able to wake up each day, feeling good about being you, because no matter what, you’re always going to be YOU. Enjoy yourself, and treat yourself with kind love ♡

Loving Yourself

Hello everyone!

As Valentines Day is approaching, I wanted to write this little message that has been on my heart. LOVE. YOURSELF. Each and every one of us has the choice to either treat ourselves nicely, or treat ourselves harsh. Why not chose to treat yourself with respect, love, kind words, warmth, and care? We can’t control anyone else, but ourselves. We all want to be loved, so why don’t we start with us? It’s a simple thought; WE can love OURSELVES.

When you got bed at night, be thankful that you are you! When you wake up in the morning, be happy that you are you, and do the things that you love to do. Have fun with yourself. Follow your heart. Fulfill your dreams (big and small). Read your favorite book. Give to your favorite charity, or friend. Cook yourself your favorite meal. Put on your favorite outfit. Get ready if it makes you feel good. Stay in your PJ’s as long as you can, if that’s what makes you feel good. Have NO shame in being YOU. In fact, thank yourself over and over that you are YOU.

You cannot control others, but you can control YOU. You are more capable of loving YOURSELF than anyone else in this world is, so take advantage of that! Know that you were wonderfully and perfectly made, and you have gifts and a path in this life. Look at your hearts desires. They were put there for a reason.

Take a minute after you read this, close your eyes, and say to yourself “I am so thankful today, that I am ME,” and smile. I wish you all so much happiness. I wish I could just dump a bucket of joy on each of you! But I know that I can only control me ; ) ♥
