Inspired Pizza Wrap

Hello everyone! Hope you all enjoyed the cookie recipe! Anyone going to make it?

Today on my way downtown, I snacked on this LARABAR. If I had to pick a top 3, it would be lemon, coconut, and peanut butter cookie (the peanut butter cookie is such a go-to)

When I got downtown, I shopped around with my friend Aubrey. We were gift shopping for someone special this weekend ๐Ÿ™‚

While out, I found this adorable cup! This is so me! I wanted to buy it so badly, but it was $16 for one mug… pricey? Maybe a gift to myself? I am trying so hard to save all of my money right now, and so far, so good! But I do love a great coffee mug… ahhh!

After some shopping, we stopped to buy Chai’s at Palermo downtown Ventura. Aubrey was sweet enough to treat me! Thanks Aubs! ๐Ÿ™‚

When I came home, I had 1/2 a cookie. I knew I was going to want some later, so I thought instead of eating like 3 really fast, I would really slowly eat 1, and fully enjoy it. Let me tell ya’ it is much more enjoyable that way! Slow & steady, slow & steady ๐Ÿ˜‰

For lunch, I had a delicious pizza wrap inspired by Undressed Skeletons post this morning

Mine included:

  • ezekiel tortilla
  • marinara sauce
  • turkey
  • tomato slices
  • artichoke hearts
  • spinach
  • goat cheese

Mmm-mmm! I am glad I ran across that post this morning!

The only thing that would have made this even better would have been if it had a little bit of melted mozzarella through it. I am definitely a girl who likes “warm” foods & drinks, and that just sounds like heaven!

Artichoke, Pesto, and Turkey Melt

Good afternoon everyone! Hope you’re having a great day! HAPPY LEAP YEAR!

Did you know you can do WHATEVER you want today? Most years, you don’t even get this day! Think about that!

Today is “Way Back WHENsday” on my blog. Clever, right? Haha, if anyone googles this, and find out if someone came up with this before me, please don’t tell me! I am feeling really creative right now ๐Ÿ˜‰

Todays post for Way Back WHENsday (every Wednesday I will link to an old post that has a good recipe, or was just a good day that I’d like to ‘bring back’) is “An Extra Healthy Pancake!” Can you believe this was right when I started at WordPress? It’s so crazy to think about how far this blog has come! (I have an original, much older blog at tumblr)

Today for a snack, I had one hard boiled egg with sea-salt & pepper, and one pure bar

Have you ever had a Pure bar? They are just like LARABARS, but have a few more ingredients. So far, I am still LARABAR > all else, but this flavor is a great switch up! Chocolate Brownie Bar. Pretty good! ๐Ÿ™‚

Around about 11:30, my Mom and I went for a walk at the park. She made us Mochas to-go

We went to the local park in Ventura, and walked 2 miles. It’s a great park to walk at!

My lunch today was sooo amazing, and so simple!

Toast:

  • One piece ezekiel
  • smear of pesto
  • 3 thin slices turkey
  • 4 pieces artichoke hearts
  • one slice havarti cheese covering the top

On the side, I had a salad with spring mix, spinach, tomato, and feta cheese, dressed in italian dressing

Oh my GOODness! The sandwich was so freaking (so freaking!!) good! The flavors together were so perfect. The taste of the pesto and artichoke together, with the melty-ness of the cheese and turkey… ahhhh, YES! You must try this one.

Now I am off to pack for San Diego! I am going there for the day tomorrow to visit my friends Kelsey & Beau (thank you Beau for being a HUGE help with my blog- I can’t thank you enough!!), and am leaving early in the morning! Got to get everything together since I work from 3-10 tonight.

The Healthier Egg Salad Experiment

As a snack this afternoon, I had sliced apples and sliced LARABAR

My favorite LARABAR to use with this recipe is Peanut Butter Cookie

Super simple, just slice and pile em’ together! Tastes like a healthy candy apple (ish!!) I ate this right before the gym, and it gave me just the right amount of energy to get through my 50 minutes of cardio. That wasn’t planned, but it felt better to be working out today than not, so I just kept going. You know those days ๐Ÿ˜‰

For lunch today, I made an egg salad sandwich inspired by Running to the Kitchen

I must admit though, I think hers turned out better. Mine was good, but it wasn’t amazing!

I truly think I used too much yogurt ๐Ÿ˜‰

I first boiled some eggs.

I am not the queen of egg boiling. If anyone has pointers, please share! The shell was clinging so hard to the egg I thought I was never going to get a bite! ๐Ÿ˜‰

I first put the eggs in room temp water, covered them by about 2 inches, brought them to a boil, reduced heat, covered and let them sit for 15 minutes just like I was told, then laid them out. They consistency and boil was perfect, but the shell gave me trouble! I did not put salt or vinegar, and I think either/or both of those would have helped.

Instead of mayo, I used a mix I made ahead of time. The mix was greek yogurt and bruschetta, equal parts.

This was a full on experiment.

I mixed it with 3 eggs (and I snacked on two hard boiled eggs a couple hours before, right after the gym today. Holy egg overload!!)

It was great by itself, but with the egg, it was too… hmm… greek yogurt-ish. I think I just put too much, to be honest. Anyway, I added some mustard and that seemed to do the trick. It gave it just the vinegar-ish (I’m using a lot of “ish” today arn’t I??) taste that it needed.

I put the egg salad on whole wheat toast, and that made it taste even better.

I had Country Grain Salad (from Trader Joes) on the side. Mmm so good!

This tasted good, it just wasn’t what I expected, because it was not like using mayo.

I still would love to avoid using mayo, and find a better alternative, so I am going to give this another go sometime within the next couple days. Better luck next time?

Bruschetta, Wasa Crackers, and Feta

Good after noon friends! Guess what time it is? It’s time to wash all of my napkins/placemats

As you can imagine, they have been collecting quite the dusk in my Clean, Neat home

They seriously need some cleaning! After they are washed, me and the iron are going to spend some alone time together.

Wasa light rye, bruschetta, and a little bit of feta to soften the bruschetta.

To wash it down ( ๐Ÿ˜‰ ) I had dark chocolate. When I say dark, I don’t mess around. This is 85%

If you don’t like dark chocolate, you definitely won’t like this. Haha, it’s hardly sweet, but for some strange, beyond me reason, I love the dark stuff!

How dark can you go? Most people say 72% is tops

Sweet Potato Fries, and a Simple Recipe for Healthy Dip

Good evening friends! Hope you are having a great day!

Today, before going to Trader Joe’s with my Mom, I had two snacks

  • A kiwi
  • A small handful of Almonds

We got lots of goodies! I was craving sweet potato fries all day, so I bought some to have for dinner

To eat with my sweet potato fries, I made a dip:

  • 1 good spoonful of non-fat plain Greek Yogurt
  • 2 tsp. extra virgin olive oil
  • 1/4 tsp. ground cumin
  • 1 shake powdered garlic
  • A touch of sea-salt

After you put these together, mix up the dip and stick in the fridge until you’re ready to eat

To go with my sweet potato fries, I had half a container of Vegetable & Grain Country Salad topped with Bruschetta. If you can see in the pictures, I always drain the oil from my bruschetta sauce. It’s way too much for me, and always makes me feel funny. By draining the oil, it doesn’t lose it’s taste and in my opinion, it tastes even better! I love Bruschetta Sauce!

I cooked my sweet potato fries in just under 1 tbsp. of coconut oil. Cook on med/high heat until the edges get golden brown.

So many people recommend using Coconut Oil for it’s healthy benefits. I’d like to find out more, because by reading the label, it seems very saturated… I don’t see how that could be healthy for you? If you have any information, send it my way! I would love to know! In the meantime, I will do some research and get back to you all. If it doesn’t have healthy benefits, I would just as happily use Olive Oil! I love it!

Today has been so nice, and so relaxing! I did not get ready one bit!!

I stayed in my pajama’s all day, showered quickly, and then went to TJ’s. Other than that, I have been one happy bum! ๐Ÿ™‚

What videos would you guys like to see on HHTS?

Hey girls! Hope you are all doing great! I am babysitting right now, and the kido’s are sitting here with me.

I am posting as they are eating their dinner, and we are listening to Pandora. They are all smiles! What good kids ๐Ÿ™‚

Today as a snack, I had 3 kiwis. Not that we are counting calories here, but just so you guys know, kiwis are mainly protein and fiber! 25 healthy calories per kiwi. Here is a link to the nutrition facts.

And guess what went on my car today?!

This gets me so excited! Every time I look in my rear view mirror now, I see my blog title! What a good feeling ๐Ÿ™‚

For lunch, I had a wrap, and a bowl of tomato soup

Yes, I know that looks like a salad, because it was full of lettuce! I actually had to eat some before I rolled it up ๐Ÿ˜‰

It was so great! I heated up the tortilla with a little bit of olive oil spray in the pan, first. It softened it up really nicely ๐Ÿ™‚

Okay, so, as some of you may remember from a couple weeks ago, my Dad is working on our house.

He is taking all of the ‘popcorn’ off the ceilings, re-doing all of the flooring, and painting pretty much everywhere.

I had to share this. I’m sure it would drive some of you nuts (it drove me nuts at first), but believe it or not,ย I am learning to live with it.ย At least my room is spotless and dust free! That’s the beauty of being able to close your door! The rest of the house doesn’t get that benefit.

Do you see how much dust there is? It’s drywall dust! Gah! Haha, I cannot wait till it’s gone.

I tease a lot about the dust, but my Dad really is working so hard everyday. I am excited that he and my Mom are going to have such a nice home afterwards. He is a hard worker and most definitely a d0-it-yourself guy! It’s really handy!

Do you girls have a do-it-yourself Dad or Hubby?

While I was working today (for those of you who don’t know, I am a Nanny) I enjoyed a dessert cup of coffee

I decided to treat myself with a little bit of light whipped cream, marshmallows, and cute little sprinkles for a pop of color!

This is just black coffee, with half & half, because that’s what was available to me at the time. If you have a Mocha Mix, or just hot chocolate, you should totally treat yourself to this!ย It’s so prettyโ™ฅ and yummy!ย If you want to make your own Mocha, put a package of hot cocoa in about 8oz of coffee, with a splash of your favorite milk.

When I got home from my Nanny job, I snacked on this small apple and scoop of peanut butter.

Yum! I think nut butters, and nuts for that matter, are one of the most satisfying things for me.

When I say this, remember that we are all different, and certain things satisfy each of us; it’s okay if nuts don’t satisfy you…

For me, when I have something with nuts, like a nut butter, or especially a LARABAR, my appetite is soo satisfied (&happy).

What satisfies you the best?

After my apple, I was standing in the kitchen talking to my Mom about saving money, when she pulled out the chocolate chips. Haha, writting about this, I can see that it all makes perfect sense. Talking about saving money for your childs college, and reaching for the chocolate chips at the same time.

Hello stresses of having a 20 year old daughter!

I wish I could afford to pay for everything on my own… wouldn’t that be nice? Who knows, maybe a big blessing will come and I will be able to! I’m going to work my tush off & save in the meantime!

Question for all of you: what videos would you like me to do? Do you have specific questions that you would like toย SEE me answer? I think some girls want me to do one on bingeing because it is, or has been a big, heavy habit for many of us!

The Mystery of the disappearing BOBBY PIN!

Good morning girls! Well, noon-time actually!

I hope you’re all off to a great start!

This morning, after I had my quiet time & coffee, and took Jordan (other boy I ‘Nanny’) to school, I went to the gym. I did a Body Works Class this morning, and absolutely loved it! I ate this yummy bar on the way there.

I was just telling Kayla that this class motivates me so much! I feel stronger every time I leave the gym, and I feel encouraged to getย toned, and less worried about being “skinny.” It’s such a healthy mindset for me!

I know I am not the only girl who loses ALL of her bobby pins over a period of time.

Where the heck do they go?!

I swear, I have to buy new packs like every six months to a year of like 100 bobby pins, and the next time I go to buy more, it’s because they’re GONE!

When I walked up to my room, I had a note sitting on my laptop, with a little gift from my Mom.

“Got you this for San Diego. Love Mom” (She has pretty writing, doesn’t she? I have always thought that!)

Yes, this is an ALARM. Not just any alarm, but the LOUDEST alarm ever! Haha! So funny!

I know in my video I said I was going to go make some Oatmeal, but by the time I got downstairs, I felt like Eggs & and an English Muffin
