Inspired Pizza Wrap

Hello everyone! Hope you all enjoyed the cookie recipe! Anyone going to make it?


Today on my way downtown, I snacked on this LARABAR. If I had to pick a top 3, it would be lemon, coconut, and peanut butter cookie (the peanut butter cookie is such a go-to)


When I got downtown, I shopped around with my friend Aubrey. We were gift shopping for someone special this weekend 🙂


While out, I found this adorable cup! This is so me! I wanted to buy it so badly, but it was $16 for one mug… pricey? Maybe a gift to myself? I am trying so hard to save all of my money right now, and so far, so good! But I do love a great coffee mug… ahhh!


I found the gift! Look at the adorable wrapping! And this cute little flag that I got to go inside


After some shopping, we stopped to buy Chai’s at Palermo downtown Ventura. Aubrey was sweet enough to treat me! Thanks Aubs! 🙂


Look how beautiful the water looked! I took another quick snap shot off the freeway (sorry!!)… At least I was still looking, I was not looking at my camera haha, that’s why there is a tree in the middle of the photo 😉

When I came home, I had 1/2 a cookie. I knew I was going to want some later, so I thought instead of eating like 3 really fast, I would really slowly eat 1, and fully enjoy it. Let me tell ya’ it is much more enjoyable that way! Slow & steady, slow & steady 😉

For lunch, I had a delicious pizza wrap inspired by Undressed Skeletons post this morning


Mine included:

  • ezekiel tortilla
  • marinara sauce
  • turkey
  • tomato slices
  • artichoke hearts
  • spinach
  • goat cheese

Mmm-mmm! I am glad I ran across that post this morning!

The only thing that would have made this even better would have been if it had a little bit of melted mozzarella through it. I am definitely a girl who likes “warm” foods & drinks, and that just sounds like heaven!

Delicious Oatmeal ♥ Flourless ♥ Cookie Recipe

Hello everyone! I hope you’re all having a great day!

Here is the recipe for the cookies my Mom made yesterday.

She makes them all the time, and my friends and I love them! This time, she added less sugar, and I thought they were still just as good! So, if you want to lighten up, I recommend you only use the 1/4 cup cane sugar (they were honestly amazing just like this!!). If you want them to be more sweet, like my Momma, use the full 1/2 cup sugar. This recipe makes 32 cookies*



  • 1 cup butter (2 sticks)
  • 1 cup brown sugar
  • 1/4 cane sugar (1/2 for regular sweetness)
  • 2 eggs
  • 1 tsp. vanilla
  • 2 cups Oat Flour (directions below)
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 2 cups walnuts
  • 3 1/2 cups Old Fashioned or Coaches Oats (not blended)


  • Heat oven to 350
  • Mix together- melted butter, brown sugar, cane sugar, eggs, and vanilla
  • Next add 2 cups of oatmeal to a blender and blend until looks like oat flour- pour into a separate bowl
  • Add 1 tsp. baking soda, 1 tsp. cinnamon, & 1/2 tsp. salt to the blended Oats
  • Now stir both mixtures together in one big bowl
  • Finally, stir in 2 cups chopped walnuts (or 1.5 depending on what you like) & 3 1/2 cups of Old Fashioned or Coaches Oats (not blended)


  • Roll balls of cookie-dough and set on parchment paper (on a cookie sheet)
  • Flatten the balls if you want them more crispy; leave in little balls (maybe 1.5 inch) if you’d like a more fluffy cookie


  • add a few white chocolate chips on top (just for me, please???) 😉


  • Bake for 18-20 minutes (20 minutes for crispier cookie- like the photo)

In this picture: the ones in the back are ready to go in the oven, and the ones in the front just came out 🙂

The Overnight Oats I am having this morning (Kath’s Overnight Oats Recipe)-


  • 1/3 cup oats
  • 1/3 cup unsweetened vanilla almond milk
  • 1/3 cup non fat plain greek yogurt
  • 1 tbsp. chia seeds
  • 1 tbsp. peanut butter
  • 1/2 banana
  • 3 shakes cinnamon

On top, I am putting some soy nuts, cranberries, granola, and coconut 🙂

Hope you all enjoy the day! San Diego did not work out today. Sad! My friend got the stomach flu (send prayers her way) and is now in bed for the day. We had to switch the date to next Thursday. I guess I will set my suitcase aside 😉

A Few Confessions

So, I have a confession. I am addicted to Oatmeal.


At least it is not these Oatmeal Cookies that my Mom made today, right?!


Well, I am kind of addicted to these too…. I photographed one, but I ended up eating SIXTEEN cookies!


Haha, well, truly I only had 3.5, but I wanted to make it sound worse than it was, first 😉

Did it work? Did you fall for it?


My next confession, is that I always feel like someone is watching me through that little camera hole on my MacBook

Truly, I get most concerned when I am changing (makes sense, right??) so I covered it up with a post it 😉

I am guessing I am not the only one who is creeped out by this spooky little eye (????)


And my last confession today, is that we put Noah in a shower cap today.

Don’t get mad! We only kept it on for the sake of the photograph. Please tell me you’re getting a laugh out of this like we did? It was sooo funny, and boy was he glad to have the camera out of his face, and the shower cap off his head. Good thing I got cuddles later, he still loves me 😉


Look at this? Am I ridiculous? I honestly don’t feel like eating anything else lately!


I packed pre-made oatmeal with toppings/milk to heat it up on the side


I added banana, flaxseed, and peanut butter to top it. I am taking this to my babysitting job tonight.


Also, I made some Overnight Oats (same recipe as todays) for the morning. I have to wake up at 5am, and leave by 7am for San Diego, so I need something quick and filling to eat before I leave. Jeeze, I wonder if I should take some more Soakin’ Oats for the road? (AHH! Eat something else, Paige!!)

P.S. I am sorry if you thought I was going to confess something cool and crazy. Nope! It’s just my Oats addiction!

Have you ever gone through an Oatmeal OBSESSION, where it was pretty much all you wanted to eat? It’s soooo goood!!! I could literally eat it for every meal right now.

Artichoke, Pesto, and Turkey Melt

Good afternoon everyone! Hope you’re having a great day! HAPPY LEAP YEAR!

Did you know you can do WHATEVER you want today? Most years, you don’t even get this day! Think about that!

Today is “Way Back WHENsday” on my blog. Clever, right? Haha, if anyone googles this, and find out if someone came up with this before me, please don’t tell me! I am feeling really creative right now 😉

Todays post for Way Back WHENsday (every Wednesday I will link to an old post that has a good recipe, or was just a good day that I’d like to ‘bring back’) is “An Extra Healthy Pancake!” Can you believe this was right when I started at WordPress? It’s so crazy to think about how far this blog has come! (I have an original, much older blog at tumblr)


Today for a snack, I had one hard boiled egg with sea-salt & pepper, and one pure bar


Have you ever had a Pure bar? They are just like LARABARS, but have a few more ingredients. So far, I am still LARABAR > all else, but this flavor is a great switch up! Chocolate Brownie Bar. Pretty good! 🙂


Around about 11:30, my Mom and I went for a walk at the park. She made us Mochas to-go

We went to the local park in Ventura, and walked 2 miles. It’s a great park to walk at!

Hellloooo! Did you know that you’re glowing after you walk? Especially when you’re sitting right in the sun 😉


My lunch today was sooo amazing, and so simple!



  • One piece ezekiel
  • smear of pesto
  • 3 thin slices turkey
  • 4 pieces artichoke hearts
  • one slice havarti cheese covering the top


On the side, I had a salad with spring mix, spinach, tomato, and feta cheese, dressed in italian dressing

Oh my GOODness! The sandwich was so freaking (so freaking!!) good! The flavors together were so perfect. The taste of the pesto and artichoke together, with the melty-ness of the cheese and turkey… ahhhh, YES! You must try this one.

Now I am off to pack for San Diego! I am going there for the day tomorrow to visit my friends Kelsey & Beau (thank you Beau for being a HUGE help with my blog- I can’t thank you enough!!), and am leaving early in the morning! Got to get everything together since I work from 3-10 tonight.

Overnight Oats

Yep! She is going downhill! What do I do?!

I do have like 12,000 pictures on my computer… and I delete all of the food photos… whooops!


This morning, I enjoyed the Overnight Oats that I prepped last night!

Of course my coffee cup is two times the size of my breakfast. How else would I drink my coffee?


Speaking of, I was thinking about this last night. I have a few friends who have boughten me Coffee cups as random gifts; If you buy me a coffee cup as a random gift, you know me pretty darn well 😉

Prep Your ONO’s (Overnight Oat’s) Tonight

Hello loves! Okay, so I wanted to remind you all to make your Overnight Oats tonight, if you wanted to give them a try!


Oh, and yes, I ended up having a snack. I opened up the fridge to this beautiful grapefruit and had to have it! So great 🙂

First of all, dilemma! I knew my computer was starting to slow down, but now everything is starting to warn me that I don’t have enough disk space. I’ve already deleted thousands of pictures… what to do next? External hard drive?

Okay, anyways! For the Overnight Oats! If you want to give em’ a try, do it! It only takes a few minutes!


I use Coach’s Oats, because I love em’! But use whatever Oats you have 🙂



  • 1/3 cup oats
  • 1/3 cup unsweetened vanilla almond milk
  • 1/3 cup non fat plain greek yogurt
  • 1 tbsp. chia seeds
  • 1 tbsp. peanut butter
  • 1/2 banana
  • 3 shakes cinnamon


  • mix everything together in a mixing bowl
  • either cover bowl with plastic, or
  • put in separate container with a lid


I put mine in a little container.

My Moms friend Molly was getting rid of old Tupperware, and I saw this and wanted to keep it. This is some handy over-night-oat-ware!


Don’t tell me it’s old fashioned. I like it 😉
