Boysenberry Nut Oatmeal

You didn’t all think I was going to go a day without Oatmeal, did you?

Well, I didn’t go without my Oats, but I did go without the Body Works Class tonight

Why? Because I am trying to get my blog self-hosted, and it is taking it’s sweet time. There are soo many little challenges throughout this process, and it requires a lot of waiting and patience. I have actually gotten much further than I thought I would though, so that’s great!

On another note, dinner! I had Oatmeal! Of course! I swear, my body feels so much better when I eat Oats everyday.

Tonight, I put Boysenberry Jam in my Oatmeal. Oh. my. goodness! It was like dessert!

I always use this basic creamy Oats recipe:

  • 1/3 cup water
  • 1/3 cup almond milk
  • 1/3 cup Oats
  • 1 tbsp. chia seeds
  • 1/2-1 banana
  • 3 shakes of cinnamon

The method?

  • Boil 1/3 cup water
  • Add 1/3 cup Oats once boiling
  • Reduce to med heat
  • Add in chunks of banana (thick slices)
  • Add in almond milk
  • Stir/heat until it’s the consistency that you like
  • Pour into bowl
  • Add your favorite toppings

My toppings tonight included:

  • A little bit more Chia Seeds (this is seriously a miracle digestion seed)
  • 1 tbsp. gluten free granola
  • 1 tbsp. white chocolate chips (give or take)
  • 1 tbsp. almond butter
  • 1 tbsp. boysenberry jelly

So deliciously good! And now I have my Oatmeal craving covered for the day πŸ˜‰

I have noticed lately, that even though I love Oats for breakfast, I also love having them later in the day

When I eat Oats for dinner, they are perfectly filling, and they are so warm and comforting, that they truly feel like a treat. There is just something about Oatmeal that I am totally obsessed with!

Tonight as I was eating it, I was thinking…. There are probably so many other foods that we can add toppings to, try tons of different flavors, etc… but we just don’t… Like, when I make rice… why don’t I try all of these cool flavors and toppings? What about grits? I think it’s time for some more experimenting!

For some reason, rice and pesto just sounds sooo good… Hmmmm….. ideas are popping up everywhere… rice, pesto, goat cheese, spinach….? Wouldn’t that be good?!

Haha, I am just in a food mood (wait, when am I not???)

I am off to Trader Joes, because my Almond Milk is almost out, and there’s no way my life will go on tomorrow unless I go get more right now πŸ˜‰

Delicious Oatmeal β™₯ Flourless β™₯ Cookie Recipe

Hello everyone! I hope you’re all having a great day!

Here is the recipe for the cookies my Mom made yesterday.

She makes them all the time, and my friends and I love them! This time, she added less sugar, and I thought they were still just as good! So, if you want to lighten up, I recommend you only use the 1/4 cup cane sugar (they were honestly amazing just like this!!). If you want them to be more sweet, like my Momma, use the full 1/2 cup sugar. This recipe makes 32 cookies*

Ingredients:

  • 1 cup butter (2 sticks)
  • 1 cup brown sugar
  • 1/4 cane sugar (1/2 for regular sweetness)
  • 2 eggs
  • 1 tsp. vanilla
  • 2 cups Oat Flour (directions below)
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 2 cups walnuts
  • 3 1/2 cups Old Fashioned or Coaches Oats (not blended)

Method:

  • Heat oven to 350
  • Mix together- melted butter, brown sugar, cane sugar, eggs, and vanilla
  • Next add 2 cups of oatmeal to a blender and blend until looks like oat flour- pour into a separate bowl
  • Add 1 tsp. baking soda, 1 tsp. cinnamon, & 1/2 tsp. salt to the blended Oats
  • Now stir both mixtures together in one big bowl
  • Finally, stir in 2 cups chopped walnuts (or 1.5 depending on what you like) & 3 1/2 cups of Old Fashioned or Coaches Oats (not blended)

  • Roll balls of cookie-dough and set on parchment paper (on a cookie sheet)
  • Flatten the balls if you want them more crispy; leave in little balls (maybe 1.5 inch) if you’d like a more fluffy cookie

  • add a few white chocolate chips on top (just for me, please???) πŸ˜‰

  • Bake for 18-20 minutes (20 minutes for crispier cookie- like the photo)

In this picture: the ones in the back are ready to go in the oven, and the ones in the front just came out πŸ™‚

Kath Eat’s Real Food (the Queen of Oatmeal if I must say so myself)

{All of the Oatmeal’s in her Tribute to Oatmeal Page! Oh my word! Heaven on Earth Internet!}

The Overnight Oats I am having this morning (Kath’s Overnight Oats Recipe)-

Ingredients:

  • 1/3 cup oats
  • 1/3 cup unsweetened vanilla almond milk
  • 1/3 cup non fat plain greek yogurt
  • 1 tbsp. chia seeds
  • 1 tbsp. peanut butter
  • 1/2 banana
  • 3 shakes cinnamon

On top, I am putting some soy nuts, cranberries, granola, and coconut πŸ™‚

Hope you all enjoy the day! San Diego did not work out today. Sad! My friend got the stomach flu (send prayers her way) and is now in bed for the day. We had to switch the date to next Thursday. I guess I will set my suitcase aside πŸ˜‰

A Few Confessions

So, I have a confession. I am addicted to Oatmeal.

Well, I am kind of addicted to these too…. I photographed one, but I ended up eating SIXTEEN cookies!

My next confession, is that I always feel like someone is watching me through that little camera hole on my MacBook

Truly, I get most concerned when I am changing (makes sense, right??) so I covered it up with a post it πŸ˜‰

I am guessing I am not the only one who is creeped out by this spooky little eye (????)

And my last confession today, is that we put Noah in a shower cap today.

Don’t get mad! We only kept it on for the sake of the photograph. Please tell me you’re getting a laugh out of this like we did? It was sooo funny, and boy was he glad to have the camera out of his face, and the shower cap off his head. Good thing I got cuddles later, he still loves me πŸ˜‰

I packed pre-made oatmeal with toppings/milk to heat it up on the side

I added banana, flaxseed, and peanut butter to top it. I am taking this to my babysitting job tonight.

Also, I made some Overnight Oats (same recipe as todays) for the morning. I have to wake up at 5am, and leave by 7am for San Diego, so I need something quick and filling to eat before I leave. Jeeze, I wonder if I should take some more Soakin’ Oats for the road? (AHH! Eat something else, Paige!!)

P.S. I am sorry if you thought I was going to confess something cool and crazy. Nope! It’s just my Oats addiction!

Have you ever gone through an Oatmeal OBSESSION, where it was pretty much all you wanted to eat? It’s soooo goood!!! I could literally eat it for every meal right now.

An extra Healthy Pancake!

Good morning everyone! I hope you’re all doing as great as I am! I am feeling so beyond blessed this morning! As some of you know, I stayed up super late last night working on my blog and I have had a ton of progress. This is my official blog site!Β If you’re a loyal follower (thank you so much!) please add this to your bookmarks! It’s still being updated, but will eventually be everything I dream of it to be, thanks to all of the support I have!

For now, here’sΒ breakfast!

A delicious healthy pancake!

Here are all the ingredients you will need

If you don’t have 1/3 cup quick oats, use one pack of instant oatmeal like I did

Mix everything together in a bowl, and pour into a pan coated lightly with butter or pam (butter is better if you like the edges a bit more toasty like I sometimes do). Smooth it out into the shape of your pan (or whatever shape you want!) with a spoon

While you’re cooking that over medium heat, get your toppings ready to go

Using a small microwave safe container, put your walnuts in the microwave for about 1 minute and 30 seconds

Once your pancake can ‘shake’ in the pan without sticking, it’s ready to flip (be gentle!)

Cook it just a little while longer on low heat, put into a plate, add your toppings, and you’re ready to go! Don’t forget to heat your syrup first, too! : )

Now you’re ready to eat!

So yummy! You’re all going to LOVE this!

Oatmeal is back for breakfast!

Good morning everyone! I hope you slept well! It’s weird that I slept less hours last night than I normally do, but slept better than I have in a while, plus I have tons of energy this morning! Maybe the trick is less hours, hehe.

Breakfast

I went to sleep last night DREAMING about what oatmeal I was going to have this morning. I’m usually obsessed with oatmeal and eat it everyday, but lately cereal has replaced this tradition. Not this morning, though! The oatmeal is back!

In my oatmeal: 1/4 cup water, 1/3 cup almond milk, 1/2 cup oats, 1/2 a banana, 1/2 tbsp. chia seeds, 1/2 tbsp. hemp seeds, and about 1/8 cup chopped walnuts.

To toast the walnuts, I put them in the microwave for about 1 min and 30 seconds. Thank you for the ideaΒ Kath Eats Real Food!

To make my oatmeal, I put the water, almond milk, and chunks of banana in the pot on medium heat until it was creamy.

Then I headed my chia seeds and hemp seeds for about 30 seconds in the microwave, just to take the chill of the fridge off

Next, I put everything into a bowl, and sprinkled the seeds and walnuts on top

The last step was to get a teaspoon of almond butter, and plop it right there on top!

Delicious! I love having the almond butter on the spoon too. I personally don’t mix it in because I like to get just a little with each bite.

There you have it! My healthy, delicious bowl of oatmeal. I was definitely inspired by Kath this morning (and last night when I was digging through her blog- check it out!)
