Boysenberry Nut Oatmeal

You didn’t all think I was going to go a day without Oatmeal, did you?

Well, I didn’t go without my Oats, but I did go without the Body Works Class tonight

Why? Because I am trying to get my blog self-hosted, and it is taking it’s sweet time. There are soo many little challenges throughout this process, and it requires a lot of waiting and patience. I have actually gotten much further than I thought I would though, so that’s great!

On another note, dinner! I had Oatmeal! Of course! I swear, my body feels so much better when I eat Oats everyday.

Tonight, I put Boysenberry Jam in my Oatmeal. Oh. my. goodness! It was like dessert!

I always use this basic creamy Oats recipe:

  • 1/3 cup water
  • 1/3 cup almond milk
  • 1/3 cup Oats
  • 1 tbsp. chia seeds
  • 1/2-1 banana
  • 3 shakes of cinnamon

The method?

  • Boil 1/3 cup water
  • Add 1/3 cup Oats once boiling
  • Reduce to med heat
  • Add in chunks of banana (thick slices)
  • Add in almond milk
  • Stir/heat until it’s the consistency that you like
  • Pour into bowl
  • Add your favorite toppings

My toppings tonight included:

  • A little bit more Chia Seeds (this is seriously a miracle digestion seed)
  • 1 tbsp. gluten free granola
  • 1 tbsp. white chocolate chips (give or take)
  • 1 tbsp. almond butter
  • 1 tbsp. boysenberry jelly

So deliciously good! And now I have my Oatmeal craving covered for the day 😉

I have noticed lately, that even though I love Oats for breakfast, I also love having them later in the day

When I eat Oats for dinner, they are perfectly filling, and they are so warm and comforting, that they truly feel like a treat. There is just something about Oatmeal that I am totally obsessed with!

Tonight as I was eating it, I was thinking…. There are probably so many other foods that we can add toppings to, try tons of different flavors, etc… but we just don’t… Like, when I make rice… why don’t I try all of these cool flavors and toppings? What about grits? I think it’s time for some more experimenting!

For some reason, rice and pesto just sounds sooo good… Hmmmm….. ideas are popping up everywhere… rice, pesto, goat cheese, spinach….? Wouldn’t that be good?!

Haha, I am just in a food mood (wait, when am I not???)

I am off to Trader Joes, because my Almond Milk is almost out, and there’s no way my life will go on tomorrow unless I go get more right now 😉

“Mexican Pizza”

So you all know what this candy is, right? Good, because I can’t remember the name 😉

I got this Chocolate around Christmas, and I still have some left…. I don’t know if I have ever taken that long to enjoy something? I guess that’s a great thing! It is a box of 16 with a few left, plus I have shared. Wow! Talk about savoring 😉

Anyhow, I had one today as my treat 🙂

Now for the “Mexican Pizza!” You all know what I am talking about, from Taco Bell… hehe… that is what this reminded me of, but gourmet!

How to:

  • Set conventional oven to 400f
  • In pan, heat up chicken (pre-cooked) and black beans
  • Spray your two corn tortillas with olive oil spray, and let them warm in the oven while you wait
  • Get out parchment paper (or foil), stick your tortillas on top, and layer on your toppings

    • My toppings:

      • Spinach
      • Tomato slices (or diced)
      • Chicken
      • Black Beans
      • Mozzarella Cheese
  • Stick in the conventional oven using a metal sheet (something so they don’t fall apart)
  • Bake for about 10 minutes

They come out perfectly golden brown and toasty on the edges. This is soo good.

I enjoyed these soo much, and they felt soo healthy. They don’t even take sauce, and they are full of flavor

One thing I recommend: I added spinach because I wanted to “hide” some veggies in there. If you are not really a spinach person, this is probably not the place to hide the spinach, unless you put very little, because you can taste it. I can definitely see the spinach being overpowering if you use too much. Next time, I am going to leave it out. I love spin, but I think it would go better with a “Greek Pizza” just like this, which artichoke hearts & feta, etc… Mmmm… idea? 🙂

I am feelin’ the urge to workout again, so I may go take another class tonight at 5:45: I love Body Works!

Thrifty Finds

Hello everyone! I had such a great Step II class this morning. Friday is my absolute favorite!

It’s like I get to go dance for an hour to super loud music, and an awesome instructor!

Today, I went thrift store shoppin’ and found some great little dishes.

Look at these cute little jar/mugs for $.99 each

And this bowl, which has little cozy homes for utensils to lay. Also, the little placemat was $.69 cents

Of course, you all have no clue what I am talking about, so you will see tonight, when I make it fo’ dinna’

GOOD Morning

Good morning friends! Hope you all slept great! Happy Friday! You guys ready for the weekend?

This morning, I started my day off with my Quiet time.. So many of you always ask what my quiet time is

My Quiet mornings are just time to myself, before I start my day doing anything else. I have a perfect pattern that I end up somehow following each day.

  • Wake up
  • Roll out of bed
  • Make my bed with my millions of pillows (I love them!)
  • Go downstairs, get my coffee (coffee, almond milk, agave)
  • Come back upstairs, sit in my comfy chair with my blanket and coffee, and read my devotionals
  • Sit at my desk with music on (soft, loving music- not rap!) and write in my journal about thankfulness
  • Then, after I have written in my journal and had me time, I get online and check out all of my favorite blogs & go comment crazy
  • Next, I make breakfast, snap photos, brighten them up, and write to you all
  • Usually following all of this comes the gym, but some mornings my quiet time just ends up getting extended 😉

Today, the gym is happening right after this post. I am going to a Step II Class (fancy!!)

In my cereal this morning, I had-

  • 1/2 bran flakes
  • 1/2 high fiber cereal
  • 1 tbsp. chia seeds
  • 1/2 banana
  • 1/8 cup baby (wild) blueberries
  • unsweetened vanilla almond milk
  • 1 tbsp. almond butter

And of course, coffee. I had my coffee with breakfast black, as I like black coffee with food

Truly, I usually go through coffee phases which include:

  • black coffee
  • almond milk and agave coffee
  • almond milk and half & half coffee
  • coffee mate creamyyy coffee

As you can see, they usually get worse and worse for me, haha! The coffee mate seasons always end up being around the Holidays. I wonder why? 😉

I think I am spoiled with my food. I never just have a “regular bowl” of cereal. All of my food must be full of flavor.

Enough said. Spoiled!

Yogurt & Banana Blended Dessert Bowl

So, tonight as I went downstairs to approach the cookie jar for another one of my Mom’s cookies, I decided (after 1 cookie of course) that I wanted to make a new sweet treat for the night. If two cookies didn’t satisfy me, I knew having more wasn’t going to help- all it does is make me want more! Haha, so, I made something else. And boy am I glad I did!

I had a little fun in the kitchen! In the food processor went:

  • 1 frozen banana
  • about 1/2 cup greek yogurt
  • about 1/3 cup unsweetened vanilla almond milk

Then, on the stove a heated organic shredded coconut, and frozen blueberries

Next, I poured the deliiiiiicious ‘ice cream’ (sounds more fun!!) blend into a bowl…

Sprinkled some flaxseed on top… topped that with the blueberries and coconut, and too top it all off I added about 1 tsp/2 tsp of almond butter (which tasted soo good in this!)

A delicious Petite-Treat! And seriously simple! If you don’t have a food processor, try it in the blender… who knows!

Chicken Parmesan.

Good evening everyone! Tonight, I ate dinner with my parents

It has been a while since I have done that. Since I started blogging, I usually make my own food

Tonight was too good to pass up! It was chicken parmesan with whole wheat spaghetti

Mind you, I am not usually a spaghetti girl at all, but this was so great! Thank you Daddy 😉

It was full of flavor, and nice to have a meal cooked for me. It required 0 amount of effort, and 100% enjoyment!

I think I’m going to miss this when I move out… 😉

Inspired Pizza Wrap

Hello everyone! Hope you all enjoyed the cookie recipe! Anyone going to make it?

Today on my way downtown, I snacked on this LARABAR. If I had to pick a top 3, it would be lemon, coconut, and peanut butter cookie (the peanut butter cookie is such a go-to)

When I got downtown, I shopped around with my friend Aubrey. We were gift shopping for someone special this weekend 🙂

While out, I found this adorable cup! This is so me! I wanted to buy it so badly, but it was $16 for one mug… pricey? Maybe a gift to myself? I am trying so hard to save all of my money right now, and so far, so good! But I do love a great coffee mug… ahhh!

After some shopping, we stopped to buy Chai’s at Palermo downtown Ventura. Aubrey was sweet enough to treat me! Thanks Aubs! 🙂

Look how beautiful the water looked! I took another quick snap shot off the freeway (sorry!!)… At least I was still looking, I was not looking at my camera haha, that’s why there is a tree in the middle of the photo 😉

When I came home, I had 1/2 a cookie. I knew I was going to want some later, so I thought instead of eating like 3 really fast, I would really slowly eat 1, and fully enjoy it. Let me tell ya’ it is much more enjoyable that way! Slow & steady, slow & steady 😉

For lunch, I had a delicious pizza wrap inspired by Undressed Skeletons post this morning

Mine included:

  • ezekiel tortilla
  • marinara sauce
  • turkey
  • tomato slices
  • artichoke hearts
  • spinach
  • goat cheese

Mmm-mmm! I am glad I ran across that post this morning!

The only thing that would have made this even better would have been if it had a little bit of melted mozzarella through it. I am definitely a girl who likes “warm” foods & drinks, and that just sounds like heaven!

Delicious Oatmeal ♥ Flourless ♥ Cookie Recipe

Hello everyone! I hope you’re all having a great day!

Here is the recipe for the cookies my Mom made yesterday.

She makes them all the time, and my friends and I love them! This time, she added less sugar, and I thought they were still just as good! So, if you want to lighten up, I recommend you only use the 1/4 cup cane sugar (they were honestly amazing just like this!!). If you want them to be more sweet, like my Momma, use the full 1/2 cup sugar. This recipe makes 32 cookies*

Ingredients:

  • 1 cup butter (2 sticks)
  • 1 cup brown sugar
  • 1/4 cane sugar (1/2 for regular sweetness)
  • 2 eggs
  • 1 tsp. vanilla
  • 2 cups Oat Flour (directions below)
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 2 cups walnuts
  • 3 1/2 cups Old Fashioned or Coaches Oats (not blended)

Method:

  • Heat oven to 350
  • Mix together- melted butter, brown sugar, cane sugar, eggs, and vanilla
  • Next add 2 cups of oatmeal to a blender and blend until looks like oat flour- pour into a separate bowl
  • Add 1 tsp. baking soda, 1 tsp. cinnamon, & 1/2 tsp. salt to the blended Oats
  • Now stir both mixtures together in one big bowl
  • Finally, stir in 2 cups chopped walnuts (or 1.5 depending on what you like) & 3 1/2 cups of Old Fashioned or Coaches Oats (not blended)

  • Roll balls of cookie-dough and set on parchment paper (on a cookie sheet)
  • Flatten the balls if you want them more crispy; leave in little balls (maybe 1.5 inch) if you’d like a more fluffy cookie

  • add a few white chocolate chips on top (just for me, please???) 😉

  • Bake for 18-20 minutes (20 minutes for crispier cookie- like the photo)

In this picture: the ones in the back are ready to go in the oven, and the ones in the front just came out 🙂

{All of the Oatmeal’s in her Tribute to Oatmeal Page! Oh my word! Heaven on Earth Internet!}

The Overnight Oats I am having this morning (Kath’s Overnight Oats Recipe)-

Ingredients:

  • 1/3 cup oats
  • 1/3 cup unsweetened vanilla almond milk
  • 1/3 cup non fat plain greek yogurt
  • 1 tbsp. chia seeds
  • 1 tbsp. peanut butter
  • 1/2 banana
  • 3 shakes cinnamon

On top, I am putting some soy nuts, cranberries, granola, and coconut 🙂

Hope you all enjoy the day! San Diego did not work out today. Sad! My friend got the stomach flu (send prayers her way) and is now in bed for the day. We had to switch the date to next Thursday. I guess I will set my suitcase aside 😉
